I've enjoyed different types of anime for different reasons. I've been sitting here for about 20mins trying to limit it to 5, and I keep thinking of one more I'd really want to put on the list, so I gave up on the hardcap.

I'm sure I'm forgeting some of the greats I've enjoyed and a few that are great that I just don't want to mention (enter Gundam Wing, a little DBZ, and maybe Fist of the North Star). There is just so much out there!
I think one issue to mention is the difference between Bebop and Champloo... Champloo always seemed to be moving but the characters never really seemed to develop or change. The story didn't seem very deep but the voice-over was good and the animation/action was amazing. Bebop on the other hand (I'm a fanboy here to some extent), was absolutely awesome... Everything about the show was awesome. Even though it seemed slow moving at times, the amount of character development was incredible. Where champloo would do filler with fun garbage and re-caps, Bebop did filler that developed characters and touched on the dramatic (such as sympathy for the devil, which showed spike's hard-headedness early-on and also revealed some of the potential for story telling that is eventually fully realized throughout the series).
All in all, I love my anime, it's all I really watch TV for anymore... I can honestly say I don't go out of my way to watch TV except for with anime (on the pc or tv) (although I love Jeopardy).
