I´ll just settle for more wheel choices (maybe GT4 wheels for standards), fixing some minor glitches like the problems with the tachometers and speedometers in some cars, the annoying paddle shifting animations (if they haven´t been fixed already), and fixes in some cars engine sounds (they did it with the LFA, so I don´t see how can´t they fix other cars). Oh, and widening the axles in the Premium M5 a little bit, and fixing the location of its front brake calipers. That would make a huge difference on it´s look. The standard one is fine...
Other than that, I don´t see the need for more changes. Oh! and a drag strip would be nice. They don´t need to make one, just adding the full runway at the TGTT would be more than enough.
Wow. You just made the next Gran Turismo. Although most things you mentioned are great and some are much needed, lets try and leave something for GT6.

That and:
Another 100+ cars / 20+ of which are premium at least. RUF premiums? Older Ferrari premiums (360 etc). VW Jetta premium. A few other specific ones. Testarossa? More european and american cars from the 50's - 80's. More group C etc cars. More F1 cars?
Upgraded physics again (tire width?)
More wheels and more options for standard models. More aerokit options.
Streamlined oil change/engine restore/chassis restore etc for multiple cars at once.
Faster loading garage.
Trade limits relaxed somewhat.
Lobby aspect to online racing plus other modes: drift, drag, etc
More photo locations.
Perhaps just a bleh free roam in a blank world of some sort? Like that city map in one of the intro videos?
Improved sounds.
