I wouldn't be too concerned about there being no interior (cockpit) view. I mean, it's so "realistic" Kaz, Joey Logano, Sebastian Loeb etc don't even use it, and this is at tradeshow's no less, where you think they would try to show of the "amazing" interior view.
Interior view is faux realism at it's finest, don't lose sleep over it.
The whole game is faux realism to be honest, whether cockpit view or another view is perceived to be more realistic or not is frankly irrelevant as it mainly is a question of preference, to me cockpit view "feels" the more realistic option but based on highly subjective personal preference stemming from my own experience when playing Prologue which let me experience it for the first time in the context of GT and from the first second I was hooked and it didn't even enter my mind I would have to go back to another view in the full game, but there you go.
About Kaz using bumper cam himself in that trade show, well first of all, I saw various footage of him playing GT5 himself using various viewpoints but mostly the footage I saw has been him playing in cockpit view.
Secondly this was obviously planned from the start and it could be Joey Logano prefers this view and in the spirit of making it seem fair and equal Kaz might have decided to use it purely for this reason.
Thirdly, and perhaps more cynical, with the constant debate about cockpit view he may have chosen to use bumper cam himself purely because it would convince others he prefers it himself so people start to suggest it's irrelevant anyway and convince some to say they shouldn't worry.
Lastly and perhaps most importantly, Kaz himself included this feature in GT ( and put quite an effort into the cockpits which are included ) and let the gamers experience this feature, and even when he himself doesn't rank it as his favourite viewpoint, to me and many others it is.
