A lot of the spin recoveries are more about the accelerator/brakes than steering, that one was a dab of the handbrake when it was obviously out of control then releasing everything when it is pointing roughly the right way to carry on.
This one you can just about see the steering angle at the bottom, I'm not sure whether it's possible to straighten the steering that quick with a wheel (I guess it depends on the rotation).
If you're not crashing wheel is quicker because of the extra finesse with steering, on a controller you're normally on full lock in the corners which scrubs the fronts, bad for tyre wear and carrying speed through the bend.
