Regardless of what this "interior" actually means, personally I believe that all cars will have cockpit views. The difference I think is the kind of view you would get in the replay. The full interior view of premium cars would come with mutiple-angle views. Just like these few videos from mimaximax:
It makes sense that it would have taken a lot more time and effort to recreate all the details in the car as well as the animation. Cockpit views on the other hand is not as demanding. There were already more or less 60 cars in GT5P that have cockpit views. It's inconceivable that only 140 or so car are added on top of that.
I'm sure that some would disagree and would prefer the interior=cockpit argument but hopefully someone will get the right info from PD in the next few days.
From the Gamespot and IGN Previews, I think it's safe to say that the difference in the premium and standard models is in the level of DETAIL on the interiors. There is no mention of a missing cockpit view. Expect all the cars to have cockpit view, but 800 of them to be a standard preset model.

By "standard preset" do they mean like all the GT PSP cars?

Dashboard, or cockpit view as we know it from Prologue, does not equal fully modelled interior.
All cars will have dashboard view. Only 200 racing cars will have fully modelled interiors as below.

We've heard "no interior", "less detailed interior", "all will be perfectly modeled but the premium to have the little extra". It's confusion followed by more confusion.
The old Muscle cars in the E3 demo are supposedly standard models.
All this takes is one little video clip of the cockpit view in one of these standard cars, and this whole argument will go away...

It's just now getting ironic. But it's journalists in a nutshell, isn't it? They hear what they want to hear (or think they hear), and then claim it to be fact.

The premiums have been lavished with a slightly worrying amount of detail - every single screw is visible in the hubs, the interiors have been recreated down to the stitching (standard cars won't have interiors, which is a bit sad, but there are, like, 800 of them
That goes for the interiors of the Premium cars as well. Kazunori showed the interior of a GT500 race car, complete with harness, switches and wiring.
