I would love for there to be a version of GT called Gran Turismo Classic that would be nothing but old cars (1946 to 1975) and old (real) race tracks.
Avus was one of the first tracks I was going to mention. It was a long section of the Autobahn with two huge brick banked turns at each end. Cars would scream down the autobahn, fly around the banking, scream back up the autobahn and scream around the other banking. And yes, cars would occasionally go over the top. It was a long way down, too.
Some other old tracks would be Riverside, the original street course at Watkins Glen before the race track, the long version of Sebring, the long version of Spa Francorchamps, the Nurburgring Nordschleif (as others have mentioned), Ontario Motor Speedway (the exact same dimensions as Indianapolis without having to pay the enormous licensing fee), Rheims, Montlehery, Brooklands (okay, I know it was never used as a racetrack after WWII, but we can pretend, can't we?), and at least one race course made out of hay bales on an abandoned military runway, which is how a lot of sportscar racing was done in the late '40s and early '50s. That's what Sebring was before it became a racecourse. Oh yeah, and the Daytona beach course! Race down the two-lane highway beside the beach, negotiate the corner at the end, race down the beach, then back onto the highway.
