I think one of my favorite quick recipes is "Poor Man's Lobster".

Boil Sea Bass in water, with a bit of vinegar and salt, for about 5 minutes, until it starts to break up. Have a stick of butter melted in a cup standing by. remove Bass from water, and add a bit of spice to enhance flavor, then dip in butter.

Ohhh soo good, and quick.

Mix Lays Paprika chips with the green kind.

And dip it in a sauce made out of garlic sauce, and ketchup - mixed.

Lettuce sucks. Ever notice that when you get a burger from a fast food joint you always have more lettuce than anything else. They never give you anything decent extra. How about two meat patties instead of lettuce for once.

If you're looking for hot, I recommend Backdraft. Ever had hot before? Think 5 times hotter than that, then double it again. There is no way to tell you how hot it is, unless you try it. This is not for the faint of heart.

Tasty sounding recipie there Der Alta, I'm definitley gonna try making that in the near furute. But how did you find out that grape jelly would work in chili?

Yeah I've had Croc (or was it Aligator?) Emu, Hare and Roo.

Roo was nice, had a big steak of it, chewy.

Here's a favourite, during lambing when I'm doing a bit of farm work and it's cold.

Ingredients for a rabbit stew: 2 fresh rabbits, a pack of instant mash potato, a tin of baked beans, some vegetable soup powder (we had a load of army rashion packs that had some really tasty vegetable soup powder in them, so into the pot they went), a tin of ratatouille (mixed vegetables) and a bit of water.

Skin and gut the rabbits. Chop up the meaty bits, add the rest of the ingredients and put the whole lot into a pot to boil for sometime (about an hour, on a fire).

Those are the ingredients I remember, although it was more a case of 'empty all the cupboards and put the contents into a pot with some rabbits and boil it all'. Add bacon if you feel the need to, or whatever you can find.

Oh, and one more thing: fry bacon in half a tin of cider, instead of oil. The alcohol burns off in the pan and the bacon, when cooked, has a slight hint of apples.

Grape Jelly sweetens the mix. You hardly notice it other than the sweetness. You'll never taste the grape. This really works well when cooking chili with a bit of heat in it. As the first impression of the chili to a taster is the sweet aroma and full bodied flavor. Then the heat kicks in.

Additionally, I've been adding two spoonfuls of a very dark roast coffee (ground) to enhance the smokey flavor to it. Yes, something like Maxwell house Coffee in a can.

The reaction you get is "Wow, that is a nice sweet smokey flavor." They usually get that entire sentence out before the heat comes on. "hey that's got some kick" About 30 seconds later the fire really kicks in and they head for the beer tent.

I sweetin my chili with carrots. That way it doesn't have a fruity taste to it, though, like Der Alta said, you can't really taste the grape, I still prefer carrots.
 
South TX avacado dip for Fajitas.

4 avacados
1/4 of an orion
1/3 of a tomato
2 jalepenos
1 lemon

Mash the avacados till it becomes more or less a chunky paste. Dice the 1/4 of the onion and add. Cut the tomato in to small chunks and add. He's where you either like it hot or not. Dice the jalepenos. If you want it hot, add the seeds. If you dont, vise versa. Mix well.

Last part, is the lemon. It adds a hint of bite, but is mainly for keeping the avacado from discoloring. Dont drop any seeds in the dip.

Goes great w/ fajitas or any good BBQ meal. Remember, toast your tortillas, dont just warm them up.

I dig around for a while and realise that I either have to make something new or eat leftovers that I want to take to work... So I'll make something. Tuna it is!

What you'll need:

- Tuna (Sorry Charlie, I like Starkist)
- Mayo (I like Miracle Whip)
- Bread (Meijer Split-Top White, w00t!)
- Can opener (duh!)

Start by opening the tuna. Some of you may have automatic or manual can openers, I just have this twisty one. Go ahead, twist! Go almost all the way around the can, and then take it over to the sink...

...Drain it until all the tuna juice is out. All you need is the tuna...

Put the tuna in the bowl (looks good already!), and get ready to add the most important part...

Funnily enough, I had almost the same thing for lunch, except that it was on a pita (from a Greek place across the street) but it was delicious.

You can be sure Solid Lifters will jump on this one any time soon.

Yeah, waaaay too much Mayonnaise... I find it rather sickly otherwise.

No, I'm not missing any teeth. I think the angle and my wide smile make it look like it (now that you mention it). However, it would appear as though I have something in my nose...

Next Time: I'll think I'll make Quesadillas (sp?), Tacos, etc.
 
Put about a spoonful of pickle relish in it. It makes it probably twice as good.
