I just got done eating a Bowl of Kellogg's Fiber Plus Cereal,4 eggs and 3 turkey sausage balls.

I also drank 2 cups of coffee :p

Hot and Spicy Cheez-It's flavored with Tabasco. They don't lie, you can taste the Tabasco in it, although the first few are a little chalky, and if you eat too many, you'll have a burning stomach ache.

Coincidentally, I just finished a bag of 2nd Degree Burn Doritos.

Now on to the 3rd Degree!

Was craving it so bad..

This wins the page 👍

Had a beef stroganoff sort of dish for dinner. Had a nice hearty steak liberally coated in pepper and spices and soaking in the slow cooker all day, so the meat was nice, but the dish was a bit too runny overall for my tastes. a 7/10 because of the awesome steak chunks.

One of the best pepper I've ever tasted. Well, I'm actually pouring it on something, but it's the pepper that matters

Went to Pho Fusion and tried out broken rice pork strips with coconut boba. Some of the best BBQ pork strips I’ve ever had.

(Per usual, pic from Yelp, not my own.)

:D

Went to Lolita’s (again) for lunch (my work is only a few blocks from it!). I’ve been branching out lately and trying out a bunch of San Diego’s mexican food, but I’d forgotten just how mind-blowingly good Lolita’s California burritos are. God that hit the spot just right. Makes everybody else’s California burritos taste like crap.

Welcomed the little guy to Canada before noon today. Honestly, it was simultaneously worse and better than I expected, in different ways. Just tastes like a normal piece of KFC (which in itself isn't too good), but injected with pepper jack, bacon (which was skimped on), and some spicy mayo. Meh.

Yeah, that's almost exactly what I thought of it, too. I've heard that the grilled one is better, but messier.

My Breakfast Today.

Gourmet BLT with pancetta, oven roasted parmesan dusted roma tomatoes and aioli on homemade sun dried tomato bread with locally grown organic baby greens.

Since it's cold, rainy and cloudy-gray day, I made a cold weather favorite in the Solid Lifters household...

Kidney Bean and Taco Beef Casserole

Ghirardelli Dark Chocolate Raspberry squares. I'm one of those people who loves Dark Chocolate over Milk chocolate, and these raspberry kind took $4.21 out of my pocket. But so worth it. A little skimpy on the filling, but when you got to it it was a taste to remember. 👍

Eggs Ben from Auckland's coolest cafe . It's a Golden A in health & safety (the best you can get), the service there is awesome - and dogs are allowed in the outside courtyard :D

At the risk of sounding too stereotypically American - I just ate A Sandwich an hour ago, I'm not even hungry. But that looks so good I'd eat it anyway. I love eggs benedict, and that bread just makes it look even better...

Those Eggs Ben aren't the ones pictured though. The real one looked better :dopey:.
That was for breakkie anyway. Now? Cold Leftover Pizza (so nice!!)

Solid Lifters' Kidney Bean and Taco Beef Casserole

1 to 1.25lbs of Ground Sirloin or Ground Chuck
1 can drained Red Kidney Beans
1 Hot White Onion diced
1 bag of favorite tortilla chips
1 dose of Taco Seasoning (see recipe below)
4oz. Cheddar Cheese
4oz. Mexican Cheese (Queso Panela)
1 diced Tomato (optional)
1 diced Jalapeno (optional)
1 clove minced Garlic (optional)

Taco Seasoning

2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons kosher salt
1 1/2 teaspoons hot smoked paprika
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper
Makes one dose

Preparing

Take out several handfuls of tortilla chips from bag and crush them into small pieces. Note: Use the broken pieces for this and save the whole chips for later. Prepare 1 dose taco seasoning mix.

Heat skillet and brown beef. While browning, add 1 dose taco seasoning and crushed tortilla chips. Set beef aside and use fat to brown onion. Brown onion for several minutes then add garlic, jalapeno and tomato if you want them. I normally don't. Kids don't like tomato, jalapeno and I'm not too fond of garlic in my mexican dishes. Add drained kidney beans and cook for several more minutes. Mix in beef and add to casserole dish. Top with whole tortilla chips. Top with shredded cheddar cheese and then crumble the panela on top of cheddar. Heat in oven on 375 for 20-25 minutes or until cheese looks bubbly and lightly browned. Serve with whole tortilla chips, extra cheese, jalapeno slices, sour cream, guacamole and favorite hot sauce. Serves 4-5 people.

Notes
For ground meat, I use homemade ground sirloin. Buy a piece of sirloin steak and pulse grind it in your food processor for 10-12 pulses. Do same if you prefer ground chuck. I like sirloin best because it's buttery soft and perfect for tacos and this dish. For more beef flavor and texture, go with the ground chuck. I never add the tomato, garlic and jalapeno. They are optional, but you might find this a little bland. I don't, so go with what you like. Add more or less depending on your taste. Don't forget to save the big chips for the finished dish. Sour cream is my preferred finished topping along with hot sauce to spice it up.

Good to know, I was going to ask if those were Doritos in you bean casserole.

I had some Spicy Schech Chex Mix. Nom.

Don't ever use flavored chips, like Doritos. It will taste like ass. I didn't have tortilla chips one time and used Doritos once and only once. :yuck:

Off now to make fried potatoes to go with chicken pieces. Potatoes want to be cooked covered over low heat until soft, then uncovered at a higher temp to brown and add crispness (uncovered avoids the steam effect and lets them crisp). And always add onions.
