Having some leftover mashed potato as a midnight snack. I wouldn't do this normally, but I'm trying them with Henderson's Relish and it tastes great, even when it's half-heartedly warmed up.

When you love food, but you're a teenager, so a bowl of cerial is all you're willing to put together. Really a bad idea to look at this thread at 10:30 at night...:drool:

Anybody ever had mashed potatos with cottage cheese? It somethong my grandpap always did. I ended up trying it one day, and now every time we have them, out comes the cottage cheese. If you baven't tried it, it's pretty nice.
 
I had half of a pork tenderloin and onion rings at Frisch's Big Boy last night. The other half was lunch today.

Every May, I go home to Louisville the week after Derby. One of the places on my list is Frisch's Big Boy. But I go there for the Big Boy burger. I get the Great Big Boy which is two quarter pound burgers, built like a Big Mac with Frisch's tarter sauce used as the special sauce.

I also usually buy a couple of jars of their tater sauce to take back to Texas. I think most bottled tarter sauces are disgustingly sweet. Frisch's is not sweet at all, it is perfect!

Unfortunately the Big Boy doesn't fit my diet. The tenderloin does. Tonight I had half of their grilled chicken Alfredo. I'll finish it for lunch. My diet is taking its toll on my hunger. I'm eating far less than before.
 
I got busy over the weekend...and the first half of this week. A lot of catching up to do.

I smoked a lot of meat. A turkey breast, a roast, a chicken, and a Boston butt.

Because I can't do any brining on my diet I injected every piece of meat and did a rub.

Boston Butt: Injected with cider vinegar and apple juice simmered with some sodium-free barbecue seasoning. Rubbed with Rockin' Rib Rub and Barbecue Seasoning. Remaining marinade went in the pan under it.

Roast Beef: Injected with cider vinegar and beef broth simmered with garlic herb seasonings and rubbed with Mrs. Dash garlic herb seasoning. Remaining marinade went in the pan with it.

Chicken: Injected with chicken broth and cider vinegar simmered with Cajun seasoning and rubbed with Weber's N'Orleans Cajun Seasoning. Remaining marinade went in the pan with it.

Turkey Breast: Injected with Wildtree Wing Sauce and rubbed with Pampered Chef Buffalo Rub.




The turkey breast got a heavier smoke than I wanted, being closest to the heat source, but I was taking the skin off anyway.

The skin and bones went into my pile of bones for chicken/poultry broth. Coming from smoked birds makes it really flavorful with no added salt.


Then the roast beef. This was perfect. Best roast beef I ever tasted.

When sliced you could see how beautifully it took the smoke.

Then the turkey breast and roast beef were sliced for sandwiches, bagged, and frozen. About 20 sandwiches worth out of each. I eat much less than I used to, so one slice on a sandwich does the job.

Then the chicken. Beautifully smoked and had for dinner Saturday night. I had the legs and my daughter had the wings. For lunch today I had a thigh that I put some buffalo sauce on.

Finally, the Boston Butt. The rub has a cane sugar base and it darkened up in the first half hour. I was worried I had burned it, but it was for naught. 10 hours later I had 3.5 pounds of delicious pulled pork barbecue. Well, it was 3.25 pounds when bagged and frozen, but I probably ate 1/4 pound while shredding it.

Yeah, I put it on sweet Hawaiian hot dog buns as I was out of rolls. I like a mix of barbecue sauce and mustard, but wish I had some pickles and onions too, but alas, I was out. We thawed a half pound for this and I ate what you see in the picture. My daughter had all the rest.



And then last night we had Mexican, by request of my daughter. Enchiladas Suiza(?) and rice.

This is to me the single greatest post of a true food fan I've seen on here. I've seen some good ones (looking at you @RCKakashi14 ), but man I really wish I had a set up and could do some different rubs/spiced and grill up some great stuff like this. Great post can't say that enough.
 
Had some fried chicken and macaroni salad from the grocery store last night.
That sounds good, right now. I didn't eat much in this heat. But, cold fried chicken and cold mac salad is perfect for this kind of weather.

Just had some Ritz with peanut butter.
 
Just had some of grandma's peanut butter pie.
That actually sounds good :p

Meanwhile, I'm having a sloppy joe, an apple, chocolate milk, and I'm trying these potato skin things for the first time.

My rib dinner from a few nights ago. Then, the weather was just too hot to eat. I didn't eat anything yesterday, except for a few handfuls of dry cereal.

Too hot to eat hot food but, not too hot to eat nothing. Had a nice cool dinner of sandwich and cool fixin's.

Peppered Roast Beef with Havarti Cheese Sammich
Why screw up a great thing? :D

Had this for dinner just now, with some Pommery mustard. Plus, with some Doritos I stole from Little Booger. Grape G2 to wash it down. Too hot to cook today.
