Made a chilli last night, and had it again tonight with nachos, rice and jalapenos... served, of course, with sour cream.
Day 2 chilli is always better than the day it is made, and I cooked it down on the hob to make it thicker and tastier. I grated mature cheddar over the nachos and stuck them under the grill before serving.
The chilli was made with one rather tame red chilli, but it needs to be mild enough for my Mum.
My top tip for chilli (and indeed any family meal that involves spice) is not to use fresh chillis at all (other than for looks/flavour), as they are too unpredictable in terms of heat... using chilli sauce is by far the best idea; you can add exactly as much as you need, with the same result every time. A high quality chilli sauce can make the difference between a good chilli and a great one!
Used the sauce from Persona 4's Rainy Day Special Mega Beef Bowl with some of the tiniest shrimp EVER, tossed them into a bowl of rice (skipped the egg), and served it with a bowl of instant miso soup (don't come at me, Japan!). 😅
