Last night I made pan seared salmon, roasted sweet potatoes and a salad for a belated valentine's day dinner. Today I made the last piece of salmon for myself and it tastes glorious.
I made a marinade for the salmon, pureéd garlic, lemon juice, lemon zest, pepper, salt, olive oil, and a lot of fresh rosemary. I mixed it all together and put it on the open side of the fish. Seared the fish skin side down in a cast iron pan, then finished it in a 350F oven. Absolutely amazing flavour. Sweet potatoes were just oil, salt, pepper and rosemary, roasted at 450F. Salad was simple, celery, cucumber, red and yellow peppers, mushrooms, mixed greens, topped with a dressing of balsamic vinegar, olive oil and maple syrup (why maple syrup? Because Canada).
