First of all, I'd like it to come out by the end of 2013 or thereabouts.
I'd like a lot of real world tracks.
Spa, Mont tremblant, Mount Panorama, Zandvoort, Sebring... All the usual suspects. Plus a lot of classic tracks that are no longer there (Difficult, I know)
Not necessarily a big fan of Nascar (although I do enjoy it), but if it's going to remain we need more tracks, more cars on screen and the slipstream physics really need to be sorted out. I for one would like to see a nascar nightrace. I don't know which one it is, but have seen pictures and footage of one irl. The cars look really cool under the spotlight.
More race series' and races within them. This is fairly basic. All the tracks are there already, I'm sure it can't be too complicated to integrate.
A dynamic weather system fully incorporated with change time options for all tracks.
Better damage, including punctures.
Custom races feature.
Make the A.I more competitive. GT5 represents a significant step for the gt series A.I, but it could be better.
Finally (and this is purely my wish, not many will agree with me on this one), around 500 cars, all premium (have some interiors done externally like microsoft do with forza if needed). Mostly race cars. I don't really care for road cars. Just give me a healthy batch of supercars and a few hundred race cars (enough for several from each series to compete against each other) and I'll be happy. LMP1, LMP2, GT, Sportscars, Touring cars, Classic racing cars from the 50's right up to the high performance beasts of today. F1 car's both present and a few from each era to compete against each other.
That is what I want. Real racetracks, real cars, real series, real rules. Since we are talking wishes here, I want the real racing simulator. It would be my ideal game.

a garage I can park my favorite cars in and walk around to look at them. Maybe even decorate with memorabilia and trophies.
Obviously there would have to be a cap on maximum number of cars on display in this garage. Don't expect it to be much higher than the maximum number of cars on track. A nice idea though. Not so keen on the decorating, but it would be nice to have some of your favourite cars lined up like that.

Blue-skying GT6 while GT5 is an unfinished piece of 🤬 is simply giving up on PD and Kaz.

if GT5 isn't patched into what we all had every right to expect in the first place, I have absolutely no intention of getting GT6 anyway. Fool me once...
Are you kidding? We all have different expectations. Do you realise how childish and moronic you sound? For all it's flaws, GT5 is a great game. Are you honestly saying you've never bought a game that turned out to be crap? Buyer beware, no one forced you to buy GT5. So that doesn't give you the right to demand that GT5 is patched to meet your expectations. If you don't want to buy GT6, then don't buy it. Simple as.
