Shift is absolutely shocking, the handling is nothing like a car. Or even anything on wheels for that matter.
I've been on slides that handle better than Shift.
In the video the Shift Zonda is behaving very much like the real Zonda. The engine sounds queue you in on when the driver is applying throttle.

I've driven an MX-5 as fast as possible round a tight track in real life.
I did the same in Shift and not only did the car physically bounce on the track, but the turn in kept kicking the back end out no matter what speed I was doing.
I was obviously exaggerating, I compared it to the handling of a slide. A static object. It's called sarcasm.

Going by the demo which was truly awful it doesn't matter because the cars on Shift handle like ass.

I absolutely agree with this. I'll ask my friend to try the "REAL mod" then sometime to see if it makes a dramatic difference. From what I tried (even with physics on PRO or whatever it's called and all assists off, it was just like you said, oversteer angle = steering angle and some bouncing for good measure. 👎Oversteer angle = Steering angle. Bounce.
Sorry to say, but it's obvious that your knowledge of physics isn't too adept. Try stabbing the throttle (and then immediately letting off) like you see in that Shift gameplay and you would end up in the wall with a half million dollar pile of scrap metal
