Made a chilli last night, and had it again tonight with nachos, rice and jalapenos... served, of course, with sour cream.

Day 2 chilli is always better than the day it is made, and I cooked it down on the hob to make it thicker and tastier. I grated mature cheddar over the nachos and stuck them under the grill before serving.

The chilli was made with one rather tame red chilli, but it needs to be mild enough for my Mum.

My top tip for chilli (and indeed any family meal that involves spice) is not to use fresh chillis at all (other than for looks/flavour), as they are too unpredictable in terms of heat... using chilli sauce is by far the best idea; you can add exactly as much as you need, with the same result every time. A high quality chilli sauce can make the difference between a good chilli and a great one!

Was feeling a little gourmet after seeing that the local Filipino market had some Thai holy basil.

Looks great 👍 I order this regularly from my go-to Thai restaurant, and I have also made it myself at home - never found proper Thai holy basil yet though, so thanks for the reminder to go looking for it.
 
Mrs Possum made us a delicious chicken tikka, the aromas of which banished all thoughts of photography, so you'll have to use your imagination. Or AI.

However, I can share these from September. We have two Urban Apple trees in a small courtyard. The trees are about 4 meters tall and one wide and produce a small crop of delicious fruit...

I made a hot sandwich. There was some tomato paste leftover from a few days ago, so I made a spinach and onion spread with it, then toasted it with salami, turkey, Swiss and a little olive oil.

Would that be in Edinburgh? If so, where is it so my wife and I can go in September. :D
It's not a 'restaurant' per se, more of a street food chain - one in Edinburgh in Bristo Square (Edinburgh University) and I go to one in Glasgow on Byres Rd (Glasgow University) - both are good though...


Would be magic to catch up with you in Edinburgh, though I guess I'll have to see how things go. Remind me and I'll make you a list of pubs to check out in Edin and Glasgow!

Whipped up a sausage casserole after a 6-hour chemo stint today - cooking really feels like a therapy to me now, I really enjoy it but especially love it when my Mum enjoys the food - served this in a bowl with bread and butter on the side...

Half a mile away from our hotel (Fraser Suites)! I was planning on stopping at Dropkick Murphy's for a Guinness, which conveniently is on the way back. :D

I didn't want to impose but would love to meet up somewhere!

One slight catch - I'm working on our itinerary, like I did for London, and we're only in Edinburgh for essentially one full day. Then we head just out of town to Carberry Tower Mansion House, are there for a few days, head to Cameron House on Loch Lomond for a few days then back to Fraser Suites to fly back home.

Between my broken taste buds (supertaster) and my wife's gluten intolerance, we're not big beer drinkers but we do both like ciders.
 
Pre-winter storm breakfast burrito. I used my usual breakfast stuff, so, eggs, sausage, hash brown patty, Mexican blend cheese. Then I cooked down some spinach and onions and added some sautéed cherry tomatoes.

I need to work on distributing my fillings. Some salsa would have done well.
Damn. That looks tasty.... this is my pre Rolex 24 / winter storm breakfast - scrambled eggs with diced Spam and shredded cheese, a plain bagel with strawberry cream cheese and some orange juice.

I made a Pork and Apple casserole for dinner tonight, and I tried making potato gratin for the first time - and it was a success...

The pork was pork shoulder steaks which are very fatty and need to be seared and then slow-cooked on the hob; then added onion, mushrooms, garlic, stock and medium dry cider and cooked for about 90 mins before adding some apple slices, Dijon mustard and cream. The pork was lovely and tender, and I only had a small portion because of the gratin.

The gratin was pretty tasty - cream, butter and garlic mixed together to make a sauce, then layers of sliced potato, sauce, herbs and cheese...

All served with green beans and a quarter glass of the remaining cider - my new rule is that I can only drink alcohol if it's an ingredient in my dinner, and so that's only the second alcoholic beverage I've had since my cancer diagnosis... technically shouldn't be drinking at all, but I think this counts as a side with this meal 😅
