I'll disagree with the SL65AMG evaluation, too. Go to level 3 weight reduction (pretty much needed for all of the luxo-barges Mercedes makes) then throw on the full race suspension, racing exhaust, chip, twin plate clutch and racing flywheel. Once that is done, you've got a car with about 650HP, and very well-balanced and predicable handling. If you can't handle the power (its the torque), leave TCS on at about level 5, but keep ASM off.
Before I drove the SL65AMG, I thought that I wouldn't like it, but I was wrong. I like it much more than the SLR McLaren.
BTW, the upgrades I listed for the SL65 (except for stage 2 and 3 weight reduction) are pretty much my de-facto mods for any car I drive, just to get the most out of what it has to offer. The only expensive mod in there is the full race suspension, but I feel it is needed to get the adjustability that can allow you to get the car to handle the way that you really want.
Just to give you an idea, my drivetrain preference is either FR or MR. I hate (most) FF, and can tolerate AWD.
As for the Saleen S7, the standard mods along with a supercharger give you a car that is incredibly fast and stable at those high speeds. I used my S7 pretty extensively in the game, and it served me well. It is one of the fastest cars in my garage that is not a race car. Again, use some TCS if you can't handle the incredible amount of torque generated by a supercharged S7.
