So... there is now a Chipotle restaurant in Mexico. It's located in the northern city of Monterrey, and them northerners are sort of Americanized (at least many of them think so), so let's see how it goes.

But if you ever visit Mexico and want to try a Mexican food chain restaurant, just go for Toks.
 
Tonight’s dinner: a couple baked potatoes with butter, salt, black pepper, and a few drop of off-brand Sriracha sauce, an apple, and a Shasta Zero Sugar Cola.

Have you tried scooping the potato’s out, mashing with cream cheese and season to taste then putting back in to the skins topped with cheese and bacon bits and put back in the oven to melt the top?

So good!!

Also top tip, prick the skins with a fork and rub with olive oil and salt before initial cook as this gets the skins crispy too.

I have not, but it sounds like something to try.
 
Inspired by this thread, I bought my first ever disposable BBQ to grill some sardine fillets (another first!), and served it up with Mediterranean sides including hummus and pitta (toasted on the grill), olives, lemon and feta... pretty good for a first attempt!!
