Just made a pot of white cheddar mac and cheese.
Wasn't quite as sharp as I like. I used Cabot extra sharp white cheddar.the roux got really thick, so I ended up turning off the heat and mashing in the unassimilated shredded cheddar straight into the pot after I tossed in the Mezze Penne.
Not bad at all.
