What level do you have the AI on?

This seemingly impossible, I am using a WRX GR4 with soft tyres and a normal turbocharger.

What about reducing the grip but increasing the power with turbo upgrade?

I just did this again yesterday. I was looking for somewhere to race my newly engine swapped Corvette convertible (w/ most of Priano's 700pp tune). They were pretty fun on hard, usually passing P1 on lap 4/5. On the ring, I had caught up with P1 by the karrosel (sp), but kept screwing up through the subsequent twisty sections that follow (twisty sections are not the vette's strong suit). Ended up passing P1 before Dottinger and winning by 6+ seconds. Fun all around.

Any car recommendations for CHAMPIONSHIP World Touring Car Race ?

I used a juiced up, then de-tuned & ballasted Beetle GR3 on RS tires, 3.55 rear gears. It clowns on the other cars: +8/+10 seconds per lap. It got stabs, bro. I love this car. It’s quick, fast, stops on a dime, & corners- one of the best driving cars in the game. It’s pretty much always hooked up- no over/understeer. Anyway, the race is easy with the beetle.
