After a 12 hour workday I just wanted something good to eat but easy. So I took a rack of lamb that I've been thawing and just threw it in a cast iron skillet. Rub down with olive oil, then salt, garlic powder, white pepper, black pepper, bit of rosemary, bit of oregano, and sear it flesh side down before giving it a flip after 3 minutes. Do the other side for 2 minutes to brown, then flip it again and hold the fat on the pan to render it down before you flip it one last time and throw it in a 450 degree oven for 15 minutes.
The whole thing from fridge to mouth was like half an hour. Made some instant mashed potatoes and had horiatiki salad that I made yesterday. Don't forget to parsley the lamb and potatoes when you're done.
