Had some applewood smoked white cheddar and crackers tonight, followed by a bowl of ramen, and then my roommate found a bag of shredded cheddar cheese in his fridge that expires in a week, so we made nachos with the cheese and some wheat thins.
Instead of making a cheese sauce, make a cheese spread. Just add a few tbls. of spreadable butter, pinch of salt, a little bit of white wine and put it in a food processor. If you don't mind a red tint, red wine is OK too. If you don't mind a green tint, add a couple of jalapenos.
I'll definitely try that some time at home. I'm living in a college dorm though, all I have is a kettle and a microwave, we just sprinkled the pre-shredded cheese on the crackers and microwaved them.
