Personally I'd PG the track surfaces and a few reference points, then do a much lower resolution pass for the environs. Set your zero at a visible point on the S/F line or similar. With that said I'm pretty sure photogrammetry isn't the answer here. You'd be as well using the DEFRA lidar set for a layout and work from there.
Oh i fully understand that its not going to be perfect, it's worth a try though, at least to get reference materials etc, there's obviously no Lidar data for the Gran Turismo fictional circuits.
